Please bear with me while I try to get everything in order. I might not reply as quickly to comments and upload as frequently but I will try my best!!!
For those of you who don't know, I am an absolute internet addict. When I was in Melbourne, the first thing I do when I wake up and last thing I do before I go to bed was to go online. And now that is not really an option anymore due to the speed of the internet (or the lack thereof).. I have to do other things to occupy my time.
So on a random afternoon, my little friend and I decided to bake some Cranberry Pistachio Biscotti.
- 1/3 cup light olive oil
- 1 cup white sugar
- 2&3/4 teaspoon vanilla extract
- 3/4 teaspoon almond extract
- 2&3/4 eggs
- 2&1/3 cups all purpose flour
- 1/4 teaspoon salt
- 1&1/4 teaspoon baking powder
- 2/3 cups dried cranberries
- 2 cups pistachio
Beat in the eggs.
Sift flour, baking powder and salt into a separate bowl and mix well. Then slowly add it into the eggs mixture. I suggest mixing in about 1/3 at a time.
Mix in cranberries and nuts and you'll end up with this~~~
The next step is to divide the dough into 2 equal portions and form them into 2 logs with wet hands (because the dough is going to be very sticky). Place them on a baking sheet lined with baking paper.
Bake for 35 minutes, you can tell when it's ready when the logs are light brown in colour.
Remove from the oven and set aside to cool for approximately 10 minutes. Reduce the oven heat to 135 degrees celsius.
When the biscotti is not completely cooled (otherwise it will crack when you slice it, so cool it for a shorter time if the weather is cold), cut the logs into half inch slices and place them on a cookie sheet lined with parchment paper.

Bake them foe another 8-10 minutes or until the biscotti are dry and you are done.
This recipe is really simple to make and the biscotti was really amazing. My family finished everything in 2 days and requested for more!! You can store them in a airtight container for at least a week or so if they don't get eaten up right away~~

I just find the whole process very therapeutic~~ If you have a chance you should try this recipe out. You can substitute the cranberries and nuts with other dried fruits and nuts that you like too!!
